I like having a basic crustless quiche recipe that easily adapts to the ingredients you have on hand. It’s satisfying enough that you don’t miss the traditional crust. Extra cheese on top of the quiche towards the last 15-20 mins bakes into a tasty crust.

A recipe I keep going back to when I have no idea, it’s very easy to make, you don’t need to make a crust, and as tasty. Nice way to eat more spinach.
