Description
Inspired by the various quiches I have eaten and loved so much!
This one is unique because it has no crust (because I did not have a quiche pan then) and is eggless (for my many strictly vegetarian friends).. It has a lot of tofu, high protein cottage quiche and very little of the fatt cheese. When you add in the whole lot of vegetables, this is one healthy, delicious quiche.
Ingredients

- onion (Big - 1)
- 1 yellow bell pepper
- broccoli (Finely chopped, Small sized - 1)
- zucchini (Small sized -1)
- black olives (sliced - 15-20)
- nuts (cashew, walnuts, pecans, almonds - 1/2 cup)
- 3 cloves
- 350 grams tofu
- 2 Tbsp. cheddar cheese
- 2 Tbsp. mozzarella cheese
- cottage cheese (crushed, optional, you could use additional tofu here - 150g)
- dried herbs (Mixed, rosemary, oregano, thyme, parsley, basil - 1 tbsp)
- 1 Tbsp. all-purpose flour
- 2 Tbsp. corn flour
- baking powder (optional - 1/4 tsp)
- 1 cup milk
- 1 Tbsp. olive oil
- 2 tsp. salt

Directions
- Soak the nuts in about 1/2 cup of milk and set them aside for an hour
- In a small bowl, whisk all purpose flour and 1/4 cup of milk and keep aside
- Chop the Zucchini into thin circles and keep aside
