- 3/4 cup tapioca starch (/flour,* plus more for sprinkling)
- 1/2 tsp. kosher salt
- 1 tsp. baking soda
- 3 Tbsp. sesame (and/or poppy seeds)
- 1 Tbsp. virgin coconut oil (melted and cooled, you can also use Spectrum nonhydrogenated vegetable shortening 1:1 by weight)
- 1 egg (50 g, weighed out of shell at room temperature, beaten)
- water (Lukewarm, by the 1/8 teaspoonful)
