- 8 oz. English peas (a cup fresh or frozen, shelled)
- 8 oz. sugar snap peas (a cup fresh, ends trimmed, cut on bias)
- 1/2 tsp. sea salt
- 1/4 cup walnuts
- 2 leek (small or one large, white part only, sliced very thin. You want about 4 tablespoons.)
- 3 Tbsp. flat leaf parsley (chopped fine.)
- 3 Tbsp. olive oil
- 2 Tbsp. red wine vinegar
- 1 1/2 tsp. Dijon mustard
- 1/2 tsp. sea salt
- 1/4 tsp. lemon pepper
- 1 tsp. honey
