- 2 carrots (shredded)

- 1 Tbsp. cilantro (chopped)
- 1 cup chow mein noodles
- 2 cups cooked chicken

Delicious. Just what I was hoping for. Left out the water chestnuts because granddaughter doesn’t like them. The amount and combination of items was perfect as was the sweetness, so even the picky grandkids liked it!

A great salad! I'm not a fan of vegetable oil but wasn't sure if my usual favorite coconut oil would work in a cold salad. So, I used half vegetable, half olive.

Made this salad for my usual meal prep for the work week. I was delicious and filling and so happy the dressing tasted how Chinese chicken salad suppose to taste! I will definitely be making this in the future again!
