Clodagh McKenna’s crumbed fish burgers feature a juicy fish fillet surrounded by crispy panko, a layer of crunchy fresh slaw and zesty mayo. Our beetroot and cabbage slaw would also be a good match for these delicious burgers.

- 75 grams plain flour
- 1 tsp. freshly ground black pepper
- 1 free range egg (medium, lightly beaten)
- 125 grams panko breadcrumbs
- 100 grams whiting fillets (sustainable skinless, or any sustainable white fish)
- sunflower oil (for deep-frying)
- 4 bread rolls (split in half)
- 160 grams shredded red cabbage
- 160 grams green cabbage (shredded)
- 1 carrot (grated)
- 2 Tbsp. coriander leaves (chopped, plus extra to garnish)
- 1 lemon
- 1 Tbsp. chopped coriander (finely)
- 250 mL mayonnaise
