Description
Though this simple and hearty soup is plenty tasty on its own, the magic happens when you set out all the toppings and let everyone customize their bowls just the way they like. Cheddar cheese, sour cream, crushed tortilla chips, green onions, cilantro, black olives, and hot sauce create the taco vibe. The recipe, which makes 9 cups, is a Yummly original created by Ivy Manning.

- 1 lb. lean ground beef
- 1 yellow onion (chopped)
- 15 oz. enchilada sauce (1 can, mild to medium-spicy)
- 15 oz. black beans (1 can, rinsed and drained)
- 3 cups beef broth (or up to 4 cups; or chicken broth)
- 10 oz. diced tomatoes with green chilies (1 can, such as Rotele, including juice)
- 1 cup frozen corn (or fresh kernels)
- 2 tsp. dried Mexican oregano (or regular oregano)
- 1 1/2 tsp. ground cumin
- shredded cheddar cheese (for serving)
- sour cream (for serving)
- tortilla chips (crushed, for serving)
- sliced green onions (for serving)
- chopped fresh cilantro (for serving)
- sliced black olives (for serving)
- hot sauce (or salsa, for serving)

Directions
- Cook ground beef and onion in a Dutch oven or other 5- to 6-qt. pot over medium-high heat, stirring frequently and breaking up the meat with a spatula, until meat is browned, 5-7 minutes.
- Add enchilada sauce, beans, 3 cups broth, the canned tomatoes and chilies, corn, oregano, and cumin. Bring to a boil over high heat. Reduce heat to medium-low and cook uncovered, stirring occasionally, until soup has thickened slightly and the flavors have melded, 15 minutes. Stir in 1 additional cup of broth if you’d like a more soupy texture.
- Ladle soup into bowls and set out cheese, sour cream, tortilla chips, green onions, cilantro, olives, and hot sauce for topping.
