Great! We make it frequently at work, where we have a mix of meat eaters & non-meat eaters, it satisfies all!

Delicious! This is seriously the easiest recipe with the greatest return. I had extra fresh zucchini from my garden, so I threw it in and it turned out great. I also used cilantro lime Ro-tel tomatoes. Super filling! This is going to become a regular item on my menu!!

So delicious and easy to make! Added cumin and red pepper flakes topped with Daiya cheese. Will def make again.

This was so easy to make and it was delicious! It's a perfect meal during lent! I will add some liquid to the leftovers before I warm them up in the crock pot
