- 8 bone in chicken thighs (with or without skin)
- 1 onion (large, coarsely chopped)
- 4 cloves garlic (chopped)
- 6 carrots (peeled and cut into chunks)
- 2 butternut squash (medium, seeded and cubed, about 2 cups)
- 1 eggplant (medium, peeled and cubed)
- 1/2 cup dried dates
- 3/4 cup apricots halved (dried)
- 15 oz. chickpeas (rinsed and drained)
- 3 Tbsp. tomato paste
- 28 oz. crushed tomatoes
- 28 oz. diced tomatoes (drained)
- 1/2 cup red wine
- 1/2 cup pomegranate juice (100%, Like POM)
- 1 Tbsp. fresh ginger (minced)
- cayenne (to taste, optional)

I didn't have pomegranate juice so used a tbsp of pomegranate molasses. Used diet ginger beer instead of red wine and ginger. very nice and lovely flavour, though many ingredients.
