- 3 lb. pork shoulder roast (or butt)
- 4 cups low sodium chicken broth (plus more of needed)
- 1/2 cup low sodium soy sauce (Use low sodium)
- 1/4 cup rice vinegar
- 2 Tbsp. fish sauce (optional)
- 2 Tbsp. Thai red curry paste
- 1 Tbsp. fresh ginger
- 1 Tbsp. chili paste (sambal oelek, or to taste)
- 1 lime
- 1 Tbsp. five-spice (Chinese)
- 1 tsp. black pepper
- 2 Tbsp. sesame oil
- 1/4 cup brown sugar (+ 1 tablespoon)
- 2 cups wild mushrooms (left whole - or button mushrooms, sliced)
- 4 ramen noodles seasoning (packs, packets discarded)
- 4 fried eggs (or soft boiled, for serving)
- carrots (Chopped, sliced jalapenos, cilantro + green onions, for serving)
- 1 acorn squash (medium, seeded + diced)
- 2 Tbsp. coconut oil (melted)
- 1 Tbsp. curry powder (I use spicy curry)
- 1 Tbsp. white miso paste
- 1 Tbsp. brown sugar
- pepper (to taste)

Very good and easy to make. Not enough broth though. I’d make an extra batch it for the soup next time.
I didn’t make the squash because it’s the spring and they aren’t in season but I didn’t feel like it was missing. The flavor was great! I made mine extra spicy by increasing the samba olek

This is so good that i'm interrupting eating it to leave a review!!! The directions are excellent, the flavors are complex. This is very filling so I think we will get more than 4 servings out of it. Don't regret not making this!!!! The squash I made didn't crisp up like the recipe said it would but it's still delicious with everything.
Editing to add - after dinner I put away all of our leftovers and there are still 8 portions left lol. Ours did not turn out fatty at all like another review says.

It was ok, easier to make than some recipes, but we didn't care for smell - like Char Shui pork. Flavor was good. Too much fat from the pork. Won't make again.

One of the best things I have eaten in a long time! Quite a depth of flavor. The process itself is quite important and it is worth the little extra work!
