- 2 tsp. olive oil
- 1 onion (large, chopped)
- 3 bell peppers (seeded and chopped, any color)
- 1 jalapeno (chopped, optional)
- 2 lb. ground turkey (can also use lean ground beef)
- 2 cups butternut squash (chopped raw, or pumpkin)
- 28 oz. crushed tomatoes
- 28 oz. diced tomatoes (drained)
- 15 oz. pumpkin puree (100%, not pumpkin pie mix)
- 3 cups canned beans (mixed, rinsed and drained, kidney, garbanzo, pinto, black, etc.)
- 1 1/2 tsp. pumpkin pie spice (or to taste)
- 2 Tbsp. chili powder (I used 1 tablespoon + 1 teaspoon)
- 1 Tbsp. cumin
- 1 tsp. garlic powder
- 1 tsp. dried oregano
- 1 tsp. kosher salt (or to taste)
- hot sauce (to taste, optional)
- 4 cups cooked brown rice (or quinoa, or as desired)
- shredded cheddar cheese (or a “Mexican mix”)
- plain greek yogurt
- chopped bell peppers
- chopped fresh cilantro (or parsley)
