- 8 chicken thighs (frozen)
- 6 slices crumbled bacon (cooked and, I used turkey, but you could use PORK)
- 8 oz. baby portobella mushrooms (sliced, they are right next to the regular mushrooms)
- 1 cup baby carrots
- 1 yellow onion (chopped)
- 3 cloves minced garlic (or chopped)
- 1/2 tsp. black pepper
- 1/2 tsp. kosher salt
- 1/2 cup chicken broth
- 1 1/2 cups red wine (cheap, *see note below*, you can use non-alcoholic wine, if you wish)
- 2 thyme sprigs (large fresh, I really think the fresh thyme is the key, here. Go steal some from your neighbors garden.)
