- 1 tsp. curry powder
- 1/2 tsp. turmeric
- 1/2 cumin seeds (toasted)
- 1 tsp. sugar
- 1 Tbsp. minced garlic
- 1 tsp. minced ginger
- 1/2 tsp. red pepper flakes
- 14 oz. tomato (if whole cut them into pieces)
- 1 can coconut milk
- cilantro (for garnishing, optional)

Incredibly easy, cheap, and delicious! I followed the portions listed on the recipe and found it to be enough for about 8+ meals when served over rice — perfect for meal prepping or feeding a larger group. I will absolutely be making this again!

Wow, its really good! I had some doubts, but since I love lentils and they are so nutritious I thought I'd give it a try. I added a bag of frozen sweet potatoes and a handful of grape tomatoes. I will definitely be making this as a staple winter soup!
