- 5 1/2 cups green bell pepper (red and, chopped or sliced, I did some of both, reserve some strips for garnish if desired, optional)
- 1 tsp. red pepper flakes (to taste)
- 12 oz. chicken sausage (spicy, cut into 1/2 inch pieces)
- 3 1/4 lb. boneless skinless chicken breasts (cut into 1/2 inch cubes)
- 28 oz. stewed tomatoes (Italian, undrained)
- 6 oz. tomato paste
- 14 oz. Kalamata olives (or Greek olives, drained)
- 14 oz. artichoke heart (quarters, drained)
- 4 cups chicken broth
- 5 1/2 cups quinoa
- 5 1/2 cups rice
- fresh cilantro (for garnish if desired, optional)
