Great recipe. May cut down on cayenne and substitute rest with chili powder as other suggested. Used a little over one cup chicken broth and will leave it at one cup next time. Served over white rice. Used instant pot at 25 min with quick release. Chicken was good.

Delicious. I added more scallions because...3? Who puts just 3 scallions in anything? I added more chicken broth which made it more of a stew. I doubled the corn amount. I served it over brown rice and inside corn tortillas. I perfer the tortillas

Delicious and easy. It’s good on its own in a bowl or you can make tacos / burritos

i doubled the recipe and used onions instead of scallions. also added paprika. overall, turned out ok.

Delicious & super easy to make. Used my instant pot on high for 25 min with quick release. Insanely tender.

Very tasty we enjoyed it. I used 2 lbs of chicken, doubled the spices except for the cayeene and used chili powder for the other tsp. I aslo only used 3/4 c of chicken broth and it still had a bit too much liquid. Cooked it in the instant pot for 15 min and did a 10 min natural release. Overall it was a good dish.

Yummy! Could’ve used more spices for a little more kick. Ate it in tortillas with cheese, avocado, sour cream, siracha, and lettuce as a kind of shredded taco. Will definitely make again, probably with some chilis tossed in!

This recipe was great! My family loved it. I didn’t have a can of tomatoes so I used 2 fresh tomatoes and a small can of green chiles. It turned out fresh and flavorful. Highly recommend!

So easy and yummy! I used a chopped onion instead of onion powder. I served it over brown rice. Next time I will top with shredded cheese and sour cream!

Yummy! My husband, teenager and I all enjoyed this. It has just a bit of heat - perfect for us midwesterners 😉 I served this over “Chipotle’s Cilantro Lime Rice” per the blogger’s suggestion. It made a very flavorful meal.

So easy and so delicious! First night we had over rice with a tad bit of sour cream and shredded cheese. For leftovers, we had it taco style on corn tortillas with fresh sliced avocados - SO DELICIOUS!

I made it in a pressure cooker for 20 min., quick release. My chicken pieces were just right. More time and they would have been tough. I would decrease the chicken broth to one cup next time. My diced tomatoes were low sodium so needed a bit more salt. Strained excess liquid and served over lettuce with salsa, sour cream, avocado, and cheese. Was a nice light meal and would make again.

Bland. Very bland. I like the idea of all the veggies to make a tortilla or on top of rice, but it has no flavor. I added sour cream and crumbled French onion chips on top which made it better, but without it, little flavor.
