- 2 Tbsp. olive oil
- 1 cup diced yellow onion (approx ½ large)
- 6 garlic cloves (minced)
- 1 ham bone (from spiral cut ham, with some meat still attached. If you don't have one of these, try using bone-in ham steaks or asking your butcher for a ham bone.)
- 2 lb. great northern beans (dried)
- 8 cups water
- 2 tsp. dried rosemary
- 1 tsp. Herbs de Provence (dried)
- 1 vegetable bouillon cube (no-salt added, I like the brand Rapunzel, because they have all real, readable ingredients.)
- 1 tsp. salt (a little less if you're sensitive to salt.)
- 1/2 tsp. ground black pepper
