Delicious. Definitely delicious. However, the roux ratio is off. 3 tbsp of butter to half cup flour gives you a very crumbly roux that you can’t brown. I knew it was wrong but tried it anyway and sure enough after fixing it, it was hard to develop that yummy brown butter nutty flavor that a good roux has.
Second part, make sure your crockpot is not too deep. Mine was and the biscuits never cooked fully even after baking 30 minutes because of it sitting in liquid. If you have a deep crockpot, cook the biscuits separately and serve open faced.

Really good! Modified veggies with what I had fresh & frozen, and I reduced the salt/sodium.
