- 1 cup celery (sliced, use the tender leaves at the center of the celery stalk if you have them)
- 5 large carrots (sliced)
- 1 small onion (chopped)
- 1 bay leaves (large)
- 1 Tbsp. chopped garlic
- 2 tsp. dried thyme
- 1 bunch fresh thyme sprigs
- 14.5 oz. diced tomatoes (can of)
- 15.5 oz. garbanzo beans (drained and rinsed)

- 1 tsp. salt
- 1 tsp. ground black pepper
- 1/2 cup long-grain white rice (rinsed well and drained)
- 1 handful baby spinach leaves (fresh)
