- 3 lb. pork belly (boneless skinless, cut into four pieces)
- 1/2 cup kosher salt
- 1/4 cup sugar
- 2 cups water
- 2 cups apple juice
- 1 Tbsp. fennel seeds
- 1 tsp. black peppercorns
- 1 cinnamon sticks
- 1 Tbsp. coriander seeds
- 1 Tbsp. cumin seed
- 2 sprigs thyme
- 1 cup chicken stock
- 2 bulb fennel (smaller)
- 2 apples (not super tart I used Fuji)
- 2 shallots (small, minced)
- 2 tsp. Dijon mustard
- 2 Tbsp. apple cider vinegar
- 3 Tbsp. olive oil
- 1 tsp. thyme leaves (fresh)
- 1/2 cup stilton (crumbled)
- 6 rolls (sturdy, I used cibatta)
