Description
Fresh salmon tartare pairs beautifully with crispy gluten free crackers for an appetizer that will please. A vegetarian version of the tartare can be made as well by substituting the salmon for other items such as celery, avocado, fennel, or carrots.

- 1 cucumber (small)
- 75 grams smoked salmon (or 100 gr. fresh salmon)
- 3 green onions
- dill
- 2 Tbsp. mayonnaise
- Sriracha sauce (to taste, spicy sauce)
- 1 1/2 cups puffed rice (or tempura rice)
- 1 pkg. crackers (Original Mary's Gone, or another brand)

Directions
- Dice cucumber.
- Coarsely chop salmon and green onion.
- Mix cucumber, salmon, and onion with dill, mayonnaise, and hot sauce.
- If serving right away, add puffed rice; if you plan to serve later, refrigerate the mixture, and add the puffed rice when you are ready to serve. Mix well, and place a spoonful of tartare on each cracker.
