- 2 pig's ear (each)
- 6 scotch bonnet (each)
- 2 leeks (each)
- 2 cups apple juice
- 2 Tbsp. soy sauce
- 2 Tbsp. worcestershire sauce
- 2 Tbsp. garlic salt
- 1/4 cup sugar (granulated)
- 2 Tbsp. kosher salt
- 2/3 cup hoisin sauce
- 2 Tbsp. soy sauce
- 3 Tbsp. lime juice (fresh squeezed)

Directions
- 1. In mixing bowl combine all ingredients & mix well to combine.
- 1. In sauce pot combine pig ears, peppers, leeks, apple juice, soy sauce, Worcestershire sauce, garlic salt, granulated sugar and salt.
- 2. Braise pig ears over low heat for 2-3 hours and tender.
