Very crunchy on the outside and juicy on the inside, just how you want chicken to be when baking with a coating. Just two minor things I do differently: 1) I do not pound meat to thin, I slice it to maintain the structure, and 2) I use a baking cooling rack as a roasting rack to allow the heat all the way around and ensure it has an even crunch.
