Description
Freezing tofu overnight before roasting it might seem unusual, but it’s a worth-it step that creates a crispy, chewy, craggy texture. All the better to capture this recipe’s fiery, garlicky, slightly sweet sauce made with gochujang. Look for gochujang, the Korean red pepper sauce that’s a key ingredient in bibimbap, at well-stocked grocery stores and Asian markets, or buy it online. You can use either potato starch or cornstarch to create the crispy coating, but potato starch — sold at grocery stores with baking supplies — bakes up with a flavor reminiscent of french fries. Complete the meal with some steamed rice and a vegetable. The recipe, which makes 6 cups, is a Yummly original created by Justine Lee.
Ingredients
- 28 oz. extra-firm tofu
- 1/4 cup potato starch (also called potato flour; or cornstarch)
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. kosher salt
- 1 tsp. freshly ground black pepper
- 6 Tbsp. gochujang (sweet and spicy Korean red pepper paste; buy at grocery stores, Asian markets, and online)
- 2 Tbsp. honey
- 2 Tbsp. soy sauce
- 2 Tbsp. ketchup
- 4 tsp. rice wine vinegar (unseasoned)
- 2 garlic cloves (grated)
- toasted sesame seeds
- sliced green onions
Directions
- Line a sheet pan with parchment paper. Drain tofu. Tear it into irregular 1- to 1 1/2-inch pieces, then set it on the sheet pan slightly apart. Cover loosely with plastic wrap or foil and freeze at least 8 hours. It may turn yellow. (Once tofu is frozen, you can transfer it to a zip-top plastic bag or a lidded container and freeze up to 4 months.)
- The next day, let tofu defrost completely, about 3 1/2 hours at room temperature (or about 8 hours in the refrigerator; keep it in the refrigerator if you won’t be using it right away).
- Meanwhile, preheat oven to 400°F.
