- 2 cups leftover mashed potatoes (cold)
- 1/2 cup white onion (diced, sauteed and cooled)
- 1 rib of celery (minced)
- 2 Tbsp. chopped fresh parsley
- 2 Tbsp. chopped fresh chives (plus more for garnish)
- 1/4 tsp. kosher salt
- 1/4 tsp. cracked pepper
- 1 cup all-purpose flour
- 2 eggs (beaten)
- 2 cups panko bread crumbs
- oil (for frying Use an oil with a high smoke point, like olive oil, not extra virgin olive oil or avocado oil.)
- 1/3 cup plain Greek yogurt
- 1 tsp. Dijon mustard
- 1/4 tsp. garlic powder
- 1/2 tsp. freshly squeezed lemon juice
- 1 Tbsp. freshly chopped chives
- 1 pinch kosher salt
