- 2 dill sprigs (fresh, finely chopped)
- 5 parsley sprigs (fresh, finely chopped)
- 2 cloves garlic (crushed)
- 1 onion (large, finely chopped)
- 2 eggs
- 2 Tbsp. bread crumbs (good-quality, or slightly more, as needed)
- 1 lemon
- 1/4 cup fresh lemon juice
- 1 dash Tabasco Sauce (or 1/2 hot chile pepper, red or green, finely chopped)
- ground black pepper
- salt
- vegetable oil
- 1 3/4 lb. white fish (meaty, such as cod, tilapia or halibut, pulsed until coarsely chopped in a food processor or coarsely chopped with a sharp knife)
- 1 cup bread crumbs (best-quality, I like Japanese panko crumbs best)

Yummy; add more crumbs, more seasoning and Parmesan for a twist. More pine nuts is ok too; not at all noticeable as is. Good binder though.
