I swapped the duck for large mushrooms and instead of cooking them in chicken stock, I mashed up 1/4 cube of veg stock, sesame oil and honey to make a paste which I then used to coat the 5-spiced mushrooms and then baked them in the oven at 140f for 15-20 mins. I added the hoi sin later and it was delicious.
