- 4 skinless chicken breasts (boneless)
- salt
- pepper
- 2 Tbsp. light mayo (or regular)
- 2 tsp. dijon (depending on how much flavor you like)
- 1 cup panko (Japanese breadcrumbs, find them in the international aisle of the grocery store)
- 1/2 cup grated Parmesan
- 2 cups grape tomatoes (halved, I like Cherubs, they have consistently decent flavor all year)
- 1/4 cup fresh basil (thinly sliced, you can’t substitute dry, if you don’t have fresh just leave it out)
- 1 Tbsp. extra-virgin olive oil
- 2 Tbsp. balsamic (aged)
- 1/4 tsp. salt
