- 2 eggs (beaten)
- vegetable oil (for frying)
- 2 slices provolone cheese
- 2 buns (potato-bread, toasted)
- mayo (Spicy Hummus-, recipe below)
- leaf lettuce
- roasted red peppers (Sliced, from jar)
- 1/2 cup garbanzo beans (drained and rinsed)
- 1/4 cup mayonnaise (plus 2 tablespoons)
- 1 tsp. lemon zest
- 2 tsp. lemon juice
- 1/2 tsp. salt
- 1/4 tsp. cracked black pepper
- 1/4 tsp. paprika
- 1/4 tsp. ground cumin
- 2 red pepper flakes (Pinch or, more or less depending on your preference)
- 2 Tbsp. olive oil
