I haven’t been this excited for Friday since last Friday!!! I made a huge batch of these to hold the kids over until 10 minutes from now when they are all hungry again. Soaking them in buttermilk first helps tenderize the chicken and acts as a glue to hold he cornflakes on

- 3 chicken tenders (or boneless skinless chicken breasts cut into strips)
- 1 cup buttermilk
- 1 1/2 tsp. smoked paprika (divided)
- 2 tsp. hot sauce
- 4 cups cornflakes (put in a large ziplock bag and smashed with a measuring cup or meat mallet)
- 1 tsp. smoked paprika
- 1/2 tsp. onion powder
- 1/4 tsp. salt
- 1/4 tsp. pepper
- cooking spray (some, for baking)
- 2 Tbsp. Dijon mustard
- 1 Tbsp. honey
