  • 1 zucchini (small, cut into 1/4 inch cubes)
  • 3 shiitake mushrooms (sliced)
  • 2 mini sweet peppers (chopped)
  • 1/2 cup arugula
  • 1 stalk green onion (chopped)
  • 2.8 oz. ramen noodles (I use Lotus Foods Rice Ramen)
  • radish sprouts (to garnish, optional)
  • sesame seeds (to taste)
  • 3/4 Tbsp. coconut oil
  • 1/4 tsp. turmeric powder
  • 1 Tbsp. white miso paste
  • 1 garlic clove
  • 1/2 inch ginger (knob, finely minced)
  • 1/4 tsp. red chili flakes
  • 1/4 tsp. curry powder
  • 1 cup almond milk
