- 1 zucchini (small, cut into 1/4 inch cubes)
- 3 shiitake mushrooms (sliced)
- 2 mini sweet peppers (chopped)
- 1/2 cup arugula
- 1 stalk green onion (chopped)
- 2.8 oz. ramen noodles (I use Lotus Foods Rice Ramen)
- radish sprouts (to garnish, optional)
- sesame seeds (to taste)
- 3/4 Tbsp. coconut oil
- 1/4 tsp. turmeric powder
- 1 Tbsp. white miso paste
- 1 garlic clove
- 1/2 inch ginger (knob, finely minced)
- 1/4 tsp. red chili flakes
- 1/4 tsp. curry powder
- 1 cup almond milk
