I made a vegetarian version with vegetable broth and fresh corn instead of chicken turned out very yummy !My son who is very picky even picked up the bowl and drank the broth.

I love it! I didn’t have tortellini in the house and I substituted with egg noodles and it was still amazing.

Doubled the recipe to feed more people. It was great. Also added a small can of tomato sauce to give it more tomato flavor and a bit of fresh basil

I usually make new-to-me recipes as listed for the first time I make it, but saw the notes from another review so made a couple increases. I used a whole bag of spinach, two cans of beans, 1 1/2 packages of tortellini and probably 3 cups of chicken. I might half the cream next time so we can taste the tomato a bit more. Thanks for posting your changes, Nate. Helped me decide if we wanted a heartier soup or a more liquid one. The flavors are great and the ingredients all go nicely together. We will definitely add this to our rotation. Yum!
Edited to add: upon eating leftovers for dinner the next day, I think I'll need to either keep original recipe proportions and maybe thicken the broth if needed, or double the liquid. The leftovers were pretty much tortellinis with sauce. It was yummy, but was no longer soup. 😂 So delicious though!
