Description
When everyone digs into this luscious, creamy chicken dish, they’ll think they’re at a fancy Italian restaurant! And they won’t believe it came together in just 30 minutes. Tender, juicy chicken breasts, napped with a velvety, artichoke- and tomato-studded sauce, are just as good for a weeknight dinner as they are for a special occasion. Serve the dish with your favorite pasta or rice, or over a bed of sauteed spinach. The recipe is a Yummly original created by Ashley Strickland Freeman.
Ingredients
- 2 cloves garlic
- 4 boneless skinless chicken breasts (each 6-8 oz., the same weight and thickness if possible)
- 1 1/2 tsp. kosher salt (divided)
- 3/4 tsp. black pepper (divided)
- 2 Tbsp. salted butter
- 1 Tbsp. extra-virgin olive oil
- 1/2 cup dry white wine
- 1 cup heavy whipping cream
- 1/2 cup oil-packed sun-dried tomatoes (drain, then measure; cut in half if quite large)
- 8 oz. frozen artichoke hearts (quartered, thawed)
- 1/2 cup fresh basil (coarsely chopped)
Directions
- Mince garlic and set aside. Sprinkle chicken all over with 1 tsp. salt and 1/2 tsp. pepper.
- Heat butter and olive oil in a large frying pan over medium-high heat until butter is melted. Cook chicken, turning once, until it’s browned and a meat thermometer inserted in the thickest portion reaches 160°F, 10-12 minutes total, decreasing the heat if the pan juices start to scorch. Transfer chicken to a platter and tent with foil.
- Reduce heat to medium. Add garlic to pan drippings, pour in wine, and scrape browned bits from the the bottom of the pan with a wooden spoon or spatula.
- Pour in cream and add sun-dried tomatoes, artichokes, and remaining 1/2 tsp. salt and 1/4 tsp. pepper. Cook, stirring occasionally, until sauce has thickened slightly, 3-5 minutes. (You should be able to briefly see the bottom of the pan when you draw the spoon across it as you stir.)
- Stir in basil. Spoon sauce over chicken.
