I doubled the recipe in order to feed it to the whole family. My one complaint is that it took three times as long to cook than the recipe indicates. The rice and quinoa were very stubborn. The recipe itself is good and very cheesy. My 8.5 month old daughter enjoyed it, and the adults liked it with some salt and pepper added.
