- 400 grams chopped tomatoes (tin of)
- 200 mL vegetable stock
- 1 Tbsp. tomato puree (/paste)
- 1 Tbsp. olive oil
- 1 brown onion (small, peeled and chopped finely)
- 1 clove garlic (peeled and crushed)
- 150 grams arborio rice
- 75 mL white wine (optional, replace with stock if you'd prefer)
- 50 mL double cream
- 30 grams Parmesan (grated, or other cheese if you prefer)
- 1/2 lemon
- 1 pinch salt (and black pepper)
- 3/4 Tbsp. butter
- 1/4 tsp. salt (Maldon, or just a good pinch of normal salt)
- 2 cloves garlic (peeled and crushed)
- 30 grams panko breadcrumbs (or 30g grated slightly stale bread)
- 1 tsp. chives (chopped, or parsley)
- 1/2 lemon
- 20 grams Parmesan (grated, or other cheese if you prefer)

This may be the best thing I've eaten since covid started! It was simply wonderful. I wish there was more though — we didn't see the serving size of 2 when we started making it. I recommend 2x or 4x the amounts because you'll want more!
