    I made this with Quorn mince and it was amazing. So quick and easy. This will probably from now on be a staple for when i'm lazy and hungry in the future. Only things i changed were: 1. Fried the onion for a few minutes before the mince 2. Added the green capsicum at the same time as the mince 3. Added the garlic at the same time as the canned tomatoes

    Geesh, I don’t know why I haven’t had all this good food before I started keto. This recipe was amazing and I did have fresh chopped cilantro, lime, avocado, jalapeños and shredded cheese on the side as well as almond flour tortillas. I warmed the tortillas REALLY well to make them a little stiffer than for a taco and cut them into small triangles to eat with the soup. Delicious!😋

    Very delicious recipe. I added black beans and corn, just a personal preference but other than than that followed the recipe exactly as is. Definitely will make again.
