Ingredients

2 SERVINGS
- 1 sweet potato (large, 1 3/4 c. after mashed)
- 1 cup almond milk (plain, room temp.)
- 1/2 cup vegetable broth (more or less, for desired thickness)
- orange zest (optional:)
- 1 Tbsp. extra-virgin olive oil (adds richness, optional)

Directions
- Bake sweet potato at 400F for about 40 min
- Remove skin from potato (careful, extremely hot!)
- Place potato in blender with almond milk, broth, salt, zest, and olive oil.
- Blend until silky smooth, pour into serving bowls.
- Add pepper or other garnishes to taste.
