I was a little hesitant because it seem in my preconceived mind I should use rice and not potatoes. I am glad I used the potatoes it opened my eyes to new possibilities. I used a whole bunch of cilantro because I couldn't find roots, and so my curry looks very green but the flavor was absolutely awesome. It was my first time using fresh turmeric and I think that it not being powder contributed to the wonderful spring fresh flavor I ended up with. The coconut milk took all the sting out of the pepper, but it still had the great flavor.
The family loved it and I will be making this recipe again.
I recommend it for sure.
