- 2 Tbsp. butter
- 1/2 lb. salt pork (diced into ¼" pieces*)
- 1/4 cup water
- 4 Tbsp. butter (1/2 stick)
- 3 celery (large ribs, thinly sliced, 1/8", 4 ribs if a little small)
- 1 onion (large, small diced, 1/4")
- 5/16 cup flour
- 2 cups chicken broth (or stock)
- 2 cups milk
- 3 lb. russet potatoes (peeled and diced into ½" cubes)
- 1 bay leaf (large)
- 2 tsp. Better Than Bouillon Chicken Base
- 1/2 tsp. dried thyme (crush between fingers when adding)
- 1/2 tsp. ground white pepper
- 1/4 tsp. garlic powder
- 1/8 tsp. old bay seasoning
- 1/16 tsp. onion powder
- 5/16 cup clam juice (reserved from drained can or water, *depends on how strong of a clam flavor you'd like)
- 20 oz. clams (baby, one can drained, *reserving ⅓ cup for above, second can with the juice *see note for using fresh hard-shell clams)
- 2 cups heavy cream
- 3 Tbsp. cornstarch
- cold water
- 1 tsp. table salt (regular, or to taste*, *add in small increments until it's to taste)
- fresh parsley (chopped, to garnish bowls, optional)
- oyster crackers (serve with, if desired)
