- 1 cup white wine
- 3 cups mushroom broth
- 3 cups water
- 2 cups milk (unsweetened plain plant)
- 2 tsp. lemon juice
- 1 Tbsp. nutritional yeast
- 2 bay leaves
- 1/2 tsp. thyme leaves (dried crushed)
- 1/2 tsp. sweet paprika
- 3/4 tsp. tarragon leaves (dried/crushed)
- 1 pinch rosemary (dried crushed)
- 1 pinch red pepper flakes
- 2 1/4 tsp. garlic paste (from roasting the mushrooms)
- 2 1/2 tsp. sea salt (+/-)
- 1/4 tsp. pepper (+/-)
- 1 lb. white button mushrooms (cleaned and sliced)
- 8 oz. cremini mushrooms (cleaned and sliced)
- 1 garlic bulb (small, about 10 small garlic cloves – smashed, skins removed)
- 1 cup wild rice (uncooked, approx. 2 cups cooked)
- 1/2 cup brown rice (uncooked, approx. 1 cup cooked)
