I used half and half instead of heavy cream, and fresh rosemary. Overall very good, though not super flavorful, as the shallot and rosemary don't add that much. I'm sure it will be even better today, as soups and stews typically are! I will make again and experiment as it's a great way to use ingredients on hand and get those nutrient rich mushrooms. I might even add chicken or tofu for protein.
