- 2 shallots (large, finely chopped)

- 1/4 cup chopped parsley (freshly, plus more for garnish, if desired)
- 4 oz. shiitake mushrooms (stemmed, cleaned, and sliced)
- 8 oz. cremini mushrooms (cleaned and sliced)
- 10 oz. button mushrooms (cleaned and sliced)
- coarse salt
- freshly ground black pepper
- 4 oz. creme fraiche
- 1 cup half & half
- 1 Tbsp. potato starch
- 1 Tbsp. fresh chives (sliced into small pieces to sprinkle over the finished dish, if desired)

Yum. I used the recipe as inspiration, leaving out the cream and potato starch because I didn’t have them on hand. It was delicious on fresh pappardelle.
