This recipe has real potential. We get lots of oyster mushrooms in our CSA and this is a great way to use them. For me, the mustard overwhelmed the flavor, which was unfortunate considering all the flavor development involved in the steps. It was still good, just very mustard-y. Next time I'll probably use 1 tsp of mustard instead of a tablespoon.
