- 4 Tbsp. unsalted butter (*, I used plant-based butter. See notes for vegan option)
- 1 1/2 cups chopped onions
- 1 lb. fresh mushrooms
- cremini mushrooms
- 1/3 cup dry white wine (OPTIONAL. Can be left out.)
- 2 tsp. dried dill weed (or 1.5 tablespoons fresh, finely chopped)
- 1 Tbsp. paprika (and pinch of smoked paprika, smoked paprika is optional)
- 1 Tbsp. tamari sauce (or coconut aminos)
- 2 1/2 cups vegetable broth
- 1 cup non dairy milk
- 3 Tbsp. arrowroot flour (tapioca starch may be subbed but texture will vary.)
- 1 tsp. kosher salt
- ground black pepper (to taste)
- 2 tsp. lemon juice
- 1/4 cup chopped fresh parsley
- 1/2 cup Greek yogurt (or full fat coconut milk, *canned and chilled for vegan option)
