- cream cheese
- black beans (or white)
- cilantro
- fresh lime juice
- 3 cups chicken (cooked, chopped)
- 2 cans green chiles (4-ounces each, lightly drained, see note)
- 8 oz. cream cheese (package, light or regular, softened and cubed)
- 15 oz. black beans (or white, rinsed and drained, you can really use any type of bean you prefer here or leave them out)
- 1/2 cup chopped fresh cilantro
- 1 Tbsp. fresh lime juice
- 2 Tbsp. butter
- 1/2 cup chopped onion
- 1/2 medium onion
- 2 Tbsp. flour
- 1/3 cup low sodium chicken broth
- 1/4 cup milk
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 cup enchilada sauce (green chile, or salsa verde, see note for homemade version)
- 1/2 cup Sour Cream (light or regular)
- 8 oz. Monterey Jack cheese (shredded)
- 10 flour tortillas (soft taco size)
- 1 handful chopped fresh cilantro (for garnish, optional)
