Delicious! I made a few changes, sautéed the broccoli, mushrooms, and added onions with the sausage. Added some white pepper, 3 oz of almond milk ( just because I didn't have enough coconut milk). Two eggs for a little more protein and topped with shaved Parmesan Cheese. It was wonderful!

I would recommend adding more salt, pepper, and garlic along with sautéing the broccoli a little prior to cooking.

Yummy! My spaghetti squash was overcooked a bit, but it was a delicious recipe! I added some extra salt as well.

For those of you unable or unwilling to eat dairy but want a creamy texture, this is a good alternative.
For me, the coconut flavor is a bit much even with the other flavors and i cut it with almond milk. If youre not into coconut, i would use almond milk. and treat the arrowroot powder more like a slurry, disolving in the almond milk first. otherwise, youll end up with gummy clumps. i think a good addition to this might be shallot or onion and more salt and pepper.
