- 1 lb. rigatoni (I used the mezzi rigatoni – the smaller ones because it’s great for baked dishes)
- 10 oz. frozen broccoli (omit if you’d like)
- 1/2 Tbsp. olive oil
- 5 Tbsp. unsalted butter
- 1 shallot (finely chopped)
- 3 cloves garlic (minced)
- 1/4 cup flour (all-purpose)
- 2 cups milk (I used 1%)
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 8 oz. havarti cheese (grated)
- 8 oz. provolone cheese (grated)
- 8 oz. sharp cheddar cheese (grated)
- 4 oz. cream cheese (softened)
- 1/2 cup panko bread crumbs
- 3 Tbsp. melted butter
