- 1/4 tsp. grated lemon peel

Directions
- Grill or broil whole eggplant, turning occasionally, 10 minutes or until eggplant is black and soft. Cover and let cool to room temperature. Peel eggplant and remove stem end.
- In food processor or blender, process eggplant and remaining ingredients until smooth. Season, if desired, with salt and ground black pepper and serve with pita bread or your favorite dippers.
