  • 4 chicken breasts
  • 8 slices bacon
  • 3 tablespoons oil
  • 1 pound mushrooms (sliced)
  • 1 onion (diced)
  • 1 teaspoon smoked paprika
  • 1 pinch granulated sugar
  • 3/4 cup heavy cream
  • 1 2/3 cups vegetable stock
  • 2 tablespoons cornstarch (mixed with a little water to make a slurry)
  • 1/4 pound cheddar cheese (grated)
  • fresh parsley (to garnish)

    Directions

    1. Preheat the oven to 400°F. Grease a baking dish with oil. Season the chicken and wrap 2 pieces of bacon around each breast. Heat 2 tbsp oil in a large frying pan, add the chicken and sear, turning for 4-5 mins. Remove from the pan and place in the baking dish.
    2. Add 1 tbsp oil to the pan then add the mushrooms and onions. Sauté for 2-3 mins then stir in the paprika and sugar and season. Pour in the cream and stock and bring to a boil. Mix the cornstarch slurry into the pan and simmer, stirring, until thickened.
    3. Pour the mushroom sauce over the chicken. Sprinkle with cheese then bake for 20-25 mins. Sprinkle with parsley then serve.
