This is going to be a terrible review since I changed the whole recipe to make it vegetarian. I subbed gnocchi (1lb) for chicken, used a no chicken vegetable broth (6 cups) and full fat coconut milk instead of cream (full can- maybe 2 cups?) as well as doing extra carrots (4), celery(3 stalks), mushrooms (16oz), and herbs (tons of fresh rosemary, thyme and parsley). Cooking process was basically the same, I just sauteed the vegetables longer (8-10 min) and added the gnoochi and coconut milk when it says to add cream. But, changes aside, I loved it!!! One of the fastest, easier soups I have ever made. So flavorful, everyone had seconds, and it freezes well!

It was a cold day and while browsing found this recipe. I had everything in the house, no need to go out. Very easy, super delicious. Only thing I didn't have was the half and half, so used evaporated milk. Yum!
