Creamy Chicken and Bacon Tater Tot Casserole

Whether it’s weeknight dinner, a big game party, or a potluck, this is the dish that will have everyone reaching for seconds. The chicken filling, made with cream cheese and sour cream as well as smoky bacon, gets topped with cheddar cheese and plenty of crispy Tater Tots. It’s a recipe that will be loved by all — including the cook, because it’s a snap to put together. Feel free to add a generous shake of hot sauce to the filling and at the table! Ingredients
- nonstick cooking spray (or a little vegetable oil)
- 8 slices bacon (8 oz.)
- 8 oz. cream cheese (at room temperature)
- 1 1/4 cups light sour cream
- 2 cups shredded cheddar cheese
- 1 cup low fat milk
- 1 oz. ranch seasoning (1 packet)
- 2 tsp. hot sauce (such as Tabasco, plus more for serving; optional)
- 5 scallions (divided)
- 3 1/2 cups cooked chicken (shredded)
- 24 oz. frozen tater tots (5 1/2 cups)
Directions
- Preheat oven to 400°F with a rack set in the upper third. Spray a 9x13-inch baking dish with cooking spray and set aside.
- Chop bacon. Place bacon in a large frying pan over medium heat. Cook, stirring often, until bacon is browned and crispy, 10-12 minutes. With a slotted spoon, transfer bacon to a plate lined with paper towels. Let cool about 5 minutes.
- Meanwhile, in a large bowl, stir cream cheese until smooth. Add sour cream, 1 1/4 cups cheddar cheese, the milk, ranch seasoning, and hot sauce, if using, and whisk until blended.
